I am the egg man

Here’s an interesting start to an email:

I work for the British Egg Information Service (yes, there is such an organisation!) which handles the PR for British eggs, helps with queries from the public, run events and much more. It’s egg-cellent fun (sorry…) One of those events is British Egg Week (1-7 October), the annual celebration of the versatility and healthiness of eggs. And that’s why I’m contacting you today. We hoped you may be interested in receiving a new cookery book which is being launched for British Egg Week. 

Well of course, I had to say ‘yes’ and the book (called Take a Box of Eggs, the latest in the Dairy Cookbook series) contains over 100 triple-tested egg recipes of varying degrees of difficulty – from classic boiled eggs through to Spanish omelettes, huevos rancheros and soufflés. There is some mouthwatering photography and each of the recipes has its own QR code linking to an ingredients shopping list.

Anyway, as it’s British Egg Week I thought I’d share what I had for breakfast today – eggs, scrambled. And my recipe (which isn’t in the book) is simple: two eggs, a little melted butter, some grated parmesan and a swirl of cream…

There. You can have that one for nothing. You can have the recipe book for nothing, too. To flag up some key dates – British Egg Week runs until 7 October and the following Friday, 12 September [I think they mean October] is World Egg Day (yes, really).

My favourite egg recipe is my version of a tortilla, or Spanish omelette.Take three eggs, preferably laid by one of my hens, Buffy, Dotty, Polly or Winnie, and whisk together with seasoning to taste.In a small frying pan pour about a desert spoon of rapeseed oil and when warmed, a small knob of butter.When the butter has melted, add enough cubed, cooked potatoes to well cover the bottom of the frying pan.Lightly fry until just going golden, then add a thinly sliced small onion. Fry for a further five minutes, or so, taking care not to burn the onions. Then turn the heat right down and cover with a lid, or chopping board or anything else that is handy! To help the top cook, make a couple of small slits in the omelette with your spatula before covering. (Or, if you have a metal handled frying pan, unlike my plastic one, you could pop it under the grill or in the oven). When the top is cooked, slide out onto a warm plate and eat with homemade tomato chutney… delish!To spice it up a little just add some Worcester sauce to the egg mixture (or tabasco if you are feeling brave).To ring the changes I will sometimes slice up some mozarella and add it to the top of the omelette before covering.

  2. Oh dear, what I forgot to say in the above, was…. or so, taking care not to burn the onions. Add the egg mixture, then turn the heat right down…… You can see I'm not used to writing out recipes! Wouldn't have been a very good omelette without the eggs, would it?! Sorry about that.

  3. I'm not sure if it counts as an actual recipe, but a soft-boiled egg, with toasted soldiers (no crusts, no butter), is possibly the best breakfast ever devised.

  4. You need to start keeping your own chickens – nothing like homegrown eggs to make eggy stuff even better

  6. LOL. Changed my diet a few months ago to a high protein diet, so we eat LOADS of eggies in our house. Hmmm, tummy rumbling….

    Recipes, right as I have a cold I think simple is the best. I love poached eggs but am not very good at getting them done in the pan so have easier recipe. Put egg in greased ramekin, poke yolk so it doesn't pop, cover with clingfilm and pierce a few more times, cook in microwave for 1-2 mins (or until its ready!).Serve with a little bit of pepper, mmmm!BNM

    Mine would have to be just scrambled egg with a sprinkle of pepper, I would love to have a recipe more imaginative but there's nothing like scrambled egg on toast in the morning!
